I love Paris and travel there regularly but I have never braved oysters. I believe 2015 will be my year to expand my culinary repertoire.

There are 4 of us who meet regularly for lunch, good conversation and lots of laughs. A French physician, a Belgian pediatrician, a French artist and me an American lawyer. They almost always start with oysters. At first, I didn’t even want to try but then in the vein of “I can never really be French” if I don’t eat oysters, I started to eat just one. It takes time and now I do order oysters but I know I’m not there yet. My friends never put any sauce on the oysters, always “au naturel” and recently in Bruges where I ordered oysters on my own they were served without sauce. I’d love to know why the French are so in love with oysters and why always au naturel!
